I live on the JP/Rozzie border, so I've headed over to the great little tapas bar/ book & music store Tres Gatos quite a few times. I recently read this interesting open letter that the management wrote to all stakeholders in their three local restaurants, regarding trying to close the vast wage gap between front of house, who earn a lot more, and back of house (cooks, chefs) who earn significantly less.
